Chew on This: Trans Fat on Display

HSPH student Karen Lachmayr is probably wondering who put these big blocks of trans fat--universally described as "disgusting" -- on display in the cafeteria. Why, Walter Willett and the Department of Nutrition, of course. Worse for the arteries than butter, trans fat is finally getting its due. The FDA has proposed adding trans fat content to food labels and invited public comment. In support of the FDA proposal, the nutrition department is making a letter available for members of the HSPH community to sign. Willett, Meir Stampfer and nutrition experts at other universities have sent in their own letter. The 90-day comment period on the rule ends February 15.

Note: The HSPH cafeteria has switched to trans fat-free oils for deep frying, but some prepared foods, such as french fries, are still high in trans fat.
