Taking trans fats off the menu

Two Harvard T.H. Chan School of Public Health nutrition experts appeared on the September 19, 2018 episode of the CBS Boston podcast Name Brands to address common food and public health questions. Eric Rimm, professor in the departments of Epidemiology and Nutrition, and Walter Willett, professor of epidemiology and nutrition, discussed whether coffee causes cancer, organic produce is healthier than non-organic, and alcohol has health benefits.

Co-host Roger Berkowitz, president & CEO of Legal Sea Foods, also spoke with the pair about how his work with the School’s Nutrition Round Table inspired him to remove trans fats from recipes at his restaurant. Berkowitz said that he conducted blind taste tests to see if menu items would still be palatable without trans fats. To his surprise, the reformulated versions were judged to be tastier, he said.
