Nutrition news: Few Americans eat all their fruits and vegetables

Walter Willett, chairman of HSPH’s Department of Nutrition and the Fredrick John Stare Professor of Epidemiology and Nutrition, was interviewed October 8, 2010, on NPR’s Talk of the Nation about a recent Centers for Disease Control and Prevention report. The CDC report says two-thirds of Americans don’t eat the recommended two servings of fruit a day, and three-quarters don’t consume the recommended amount of vegetables. Willett and Michael Webber, of the University of Texas at Austin, discuss ways Americans can be encouraged to eat more fresh produce and throw away less food.While the cost of healthy eating is a factor for some, Willett says, “Even on a fairly low-income budget, you can have a healthy diet, but you have to be sort of double smart to know what to pick out and know how to prepare it.”
