Starting October 22, HSPH will encourage nutrition awareness by offering health-promoting foods and meals at Sebastians cafeteria at a 20 percent discount for a limited time. Discounted items will include the salad bar, "Saluté" entrées (loosely translated from French, Saluté means "to your health"), bok choy, whole-grain pizza, fruits, and yogurt. Information about nutritional content of foods will also be available on each dining table outside of the cafeteria. Karin Michels, assistant professor in the Department of Epidemiology, suggested the limited-time discount, which will last for the next several weeks.
The Saluté entrée, a daily meal that follows the dietary guidelines suggested by the Department of Nutrition, is a result of that collaboration. The entrée is denoted by the Saluté! symbol on the menu and features unsaturated fats, minimal sugar, no trans fatty acids, whole grains, and fruits and vegetables. Another dish, Bok Choy by Design, also follows Department of Nutrition guidelines. Bok choy and the salad bar are the two most popular items sold at the cafeteria, said Tappan. She added that the quest for health-promoting eating options at Sebastians never ends. Salads of the Season, for example, will soon be offered in edible shells that contain no trans fatty acids, said Tappan.
