Tuscan-Style Roasted Chicken with Basil, White Beans and Tomatoes

Ingredients, Chicken
  • 100 4-ounce boneless, skinless chicken breast halves
  • 2 ounces olive oil
  • 4 ounces red wine
  • 4 ounces fresh thyme, chopped
  • 1 ounce salt
  • 1 ounce pepper

Combine all ingredients together. Marinate for 4 hours. Grill chicken on one side and finish in a 350° F oven, until

chicken reaches internal temp of 165 °F.

Ingredients, White Bean, Basil and Tomato Sauce

  • 10 pounds tomatoes, cored
  • 2 ounces olive oil
  • 8 ounces garlic cloves
  • 3 pounds cooked white beans
  • 1 ounce salt
  • 1 ounce pepper
  • 4 ounces fresh basil, chopped
Procedure, White Bean, Basil and Tomato Sauce

Rub tomatoes and garlic with olive oil. Roast tomatoes in a 325 °F oven for 30 minutes and roast garlic in 325 °F oven for 15 minutes. Purée tomatoes and garlic and fold into remaining ingredients.


Spoon beans onto plate, top with chicken breast and sprinkle with fresh chopped basil.
