Tuscan-Style Roasted Chicken with Basil, White Beans, and Tomatoes

Ingredients:

* Chicken
* 100 4-ounce boneless, skinless chicken breast halves
* 2 ounces olive oil
* 4 ounces red wine
* 4 ounces fresh thyme, chopped
* 1 ounce salt
* 1 ounce pepper

* White Bean, Basil and Tomato Sauce
* 10 pounds tomatoes, cored
* 2 ounces olive oil
* 8 ounces garlic cloves
* 3 pounds cooked white beans
* 1 ounce salt
* 1 ounce pepper
* 4 ounces fresh basil, chopped

Preparation:
  1. Combine all ingredients together. Marinate for 4 hours. Grill chicken on one side and finish in a 350 degrees Fahrenheit oven, until chicken reaches internal temp of 165 degrees Fahrenheit.
  2. Rub tomatoes and garlic with olive oil. Roast tomatoes in a 325 degrees Fahrenheit oven for 30 minutes and roast garlic in 325 degrees Fahrenheit oven for 15 minutes. Purée tomatoes and garlic and fold into remaining ingredients.
  3. Spoon beans onto plate, top with chicken breast, and sprinkle with fresh chopped basil.
